What does the accent do?
The accent makes the vowel that it's over sound out louder than the rest of the vowels in the word.
In these verbs an attempt is made to maintain the typical verb conjugation pattern of having the next-to-last syllable sound the loudest like in most normal verbs.
Or maybe that hadn't been brought to your attention yet.
And the accent also ensures that the "i" (being the weak, wimpy vowel that it is) is kept from merging into a single "ia" diphthong once it reaches the "a."

In some cases, verbs ending in -iar have irregularities.
These are irregular verbs because they entail a stress shift: i at end of stem becomes accented.
This stress shift only occurs in *certain AR verbs: never occurs in ER or IR verbs!

criar to create, nurse, raise, rear, breed züchten
desviar to deviate, deflect, swerve, turn away abweichen
enfriar to cool, make cool, get chilled kühlen, frieren

*This change does not occur in such verbs as: aliviar, anunciar, asociar, cambiar, cariciar, columpiar, divorciar, estudiar, etc.
In all forms except nosotros & vosotros the -i at the end of the stem becomes an -í.
Drop the -ar: That's the stem !!
